We Can’t Help But Like Colorful Cupcakes!

We are completely excited to be joining the crowd at the end of this rainbow cupcake trend! What is not to like about these bright and secretly colorful cupcakes! I have made Hawaiian Rainbow Bread a couple of times after being inspired by Just Jenn Rants’ post, but recently someone started making these rainbow cupcakes and everyone online is now trying their hand at them! Finding out who was the person to start this fun trend is like following a treasure hunt of great blogs; so if you know the originator, leave a comment! We have seen them here, here, here and the list goes on!
I started with a yellow cake mix made according to directions. Then I separated the batter into six small bowls one for each of the colors: red, orange, yellow, green, blue and purple. I made each color with a generous portion of gel food coloring. Then using a 1/2 teaspoonful for each color, I started layering my cupcakes. Notice that when they are cooked the last colors I layered (red and orange) are in the middle and more dominant while the first colors I layered (blue and purple) are curving up the sides of the cupcake. I think if I was less generous with the last colors or used a 1/4 teaspoonful with each color this wouldn’t have occurred.
I think I’m going to top these cupcakes off with white frosting, green dyed coconut, and a pile of yellow Lemon Heads to be the gold at the end of the rainbow!
