Fussy Friday: Homemade Ice Cream Drumsticks

Is it just me or does ice cream soothe the soul? I hope I’m not committing blasphemy when I count it as a soul food. Ice cream makes me feel better…a lot better. And once in a blue moon….after a long long day (like today)… and when Lee is on an extra business trip (like tonight)… and when I have cleaned up a lot of unmentionable things (like a few minutes ago) – I pull out the ice cream and am relieved to hear the endearing sound of my preciouses’ little sleep noises. And ice cream brings a renewal of my spirit making the next morning so much more. A woman must have invented ice cream… or a husband that was really really in trouble. Either way, I owe a lot to the ice cream inventors. Ice cream makes me a better mom.

Yesterday, I was craving ice cream and as I was flipping through the pages of a magazine there was an ad for Nestle Drumsticks. I thought to myself, “Those look really good.” But then reality set in. I have three children under three and my car is in the shop until at least Saturday. I can’t really just hop on my bike and ride to the nearest grocery store (although I did think about it). Even if I took the stroller the ice cream drumsticks (…and me…and the kids..) would melt on the way home in this Texas 106 degree weather. Do you see why I need ice cream? At this point, I longingly looked out the window, straining my ears and hoping that by some miracle sent from heaven that an ice cream truck would drive by my house. A few precious moments passed and a truck didn’t come…and then I remembered that ice cream trucks kind of scare me in a potential-child-molester kind of way…and I forgot all about that idea real quick. So I did the only think I could do under the repressed conditions. I decided I would make my own homemade drumsticks.

First I thought I was so brilliantly creative in wanting to come up with my own Homemade Ice Cream Drumstick recipe, but then I googled and a much-more brilliant woman from Baking Bites made them a month ago with particular grace. (Find her tutorial here.) So I took her lead and then added my own touches here and there to make them kid and mom friendly. I am being honest with you when I tell you they were delicious. Below is the recipe.

P.S. I had mini sugar cones on hand as well and made tiny mini drumsticks for my kiddos. They were perfect for their little hands. I absolutely recommend them. If you can’t find mini sugar cones at your grocer, carefully cut your large sugar cones about one inch in with a butter knife. (I actually told myself in the name of being healthy that I would only have one mini drumstick, but in the end I ate four homemade mini drumsticks that kind of defeated the purpose entirely.)

**Note: Once my cones were completely frozen and finished “drying”, I wrapped them in Saran Wrap and placed them in a sturdy tupperware container in the freezer before serving time.

Homemade Ice Cream Drumsticks(recipe via Baking Bites)

1/2 gallon ice cream (any flavor), slightly softened

8 sugar cones

1 1/4 cups semisweet/dark chocolate chips

4 tbsp unsalted butter

1/4 cup finely chopped roasted/salted peanuts, optional

Set up freezer with a holder to support ice cream cones, or place 8 narrow glasses inside that can support the cones. Alternatively, prepare a baking sheet by lining it with a piece of parchment paper and setting it in the freezer.

Place 2 chocolate chips in the bottom of each of the sugar cones.

Use a butter knife to fill each of the cones with ice cream, then top off with a rounded scoop of ice cream. Place each ice cream cone in the freezer as you finish, either placing them inside the narrow glasses (or other stand) to hold them upright or laying them on the parchment-lined baking sheet.

Freeze for at least 3 hours.

Melt the remaining chocolate chips with 2 tbsp of butter in the microwave, working in 30 second increments. Choose a small bowl because it makes dipping easier. Stir in remaining butter. Chocolate should be smooth and relatively thin.

Working with one ice cream cone at a time, dip the frozen ice cream scoops in chocolate, rotate to coat and return to freezer. If using nuts, quickly dip chocolate into nuts before re-freezing.

Chill at least 1-2 hours before serving. Store in airtight bags.

Makes 8 drumsticks.
